Lamb Quinoa Meatballs

These updated meatballs combine ground lamb, grated vegetables, herbs, and spices with healthful quinoa, courtesy of Jason Jonas.

Ingredients

1 lb ground American lamb

3/4 cup cooked quinoa

1/4 cup finely chopped onion

1/4 cup grated carrot

1/4 cup grated zucchini

2 garlic cloves, chopped

1 large egg, lightly beaten

1 tsp lemon zest

1/2 tsp fresh mint, finely chopped

1 tbsp fresh oregano, finely chopped

1/2 tsp ground black pepper

1/2 tsp fine sea salt

1/2 tsp dried dill

1/2 tsp crushed red pepper

1/4 tsp ground cinnamon
